Polenta and Its Place in the Italian Diet

Prior to 1494, Italy was very accustomed to cooking with various grains that did not include Corn, any Polenta that was created before this time period was produced with millet and sorghum. While this sufficed for the Italians when it came to cooking, something was obviously missing.
